INGREDIENTS
THE CAKE
4 eggs
Sugar – 150g (5.2 oz)
Flour – 90g (3.1 oz)
Baking Powder – 1 teaspoon
Milk – 120 ml (4.05 fl oz)

WHITE ICING
Condensed milk – 200 ml (6.7 fl oz)
Coconut milk – 100 ml (3.3 fl oz)
Milk – 150 ml (5.07 fl oz)
Shredded coconut to cover the cake.
DIRECTIONS

STEP 1
PREPARATION OF THE CAKE.
In a large bowl, mix the flour with the teaspoon of baking powder. Then separate the egg whites from the egg yolks by putting the whites in an other large bowl.

STEP 2
Beat the egg whites to stiff peaks, then gradually add the 4 egg yolks and sugar.

STEP 3
When your mixture gets a smooth texture (as in the picture below), add, in several times, your flour-baking powder mixture by sifting it, then mix gently making sure to incorporate the flour.
Add the milk, then mix again.

Your preparation is ready, put it in a pre-greased square mould (if possible), then bake it in a preheated oven at 180°C (350°F) for 25-30 min.

STEP 4
PREPARATION OF THE WHITE ICING.
In a large bowl, mix: condensed milk, coconut milk and milk. Let the icing rest at room temperature while the cake is cooking.

STEP 5
Check that your cake is well baked, it must be soft but your knife or stick planted in it must come out dry. Then, prick the whole cake with a fork (this technique will allow your icing to soak perfectly in).

Cut the cake into 12 equal pieces, add 3 ladles of Icing Milk. Then put it in the refrigerator for 2 hours.

After the refrigerator, cover your cake with shredded coconut. Your Brazilian Coconut Bolo is ready to taste!
