Recipe discovered during a delicious meal prepared by my Irish friend Sean.A typical recipe passed down in his family from generation to generation.

INGREDIENTS
1 Puff pastry (for the lid)
1 Shortcrust pastry (for the base)
1 Egg
Ground beef – 800g | 1.7lb
Irish Stout (Guinness Beer) – 33 cl | 11fl oz
Button mushrooms – a handful 2 Carrots
1 Onion
3 Garlic cloves
Flour – 3 tablespoons
Fresh Thyme – a Sprig
2 Bay leaves
Chicken stock – 150ml | 5fl oz
Vegetable oil for the pan
Salt & Black Pepper
DIRECTIONS
STEP 1 Preheat the oven to 180 degrees Celsius (= 360 degrees Fahrenheit). In a large pan over medium heat, cook the ground beef with a small amount of oil.
STEP 2 While the meat is cooking, chop the onion and garlic cloves.Cut the carrots into thin strips, then cut the mushrooms into large pieces.
STEP 3 When the meat is coloured, transfer it to a bowl.In your pan, add a small amount of oil and cook the onion and garlic for a few minutes. Meanwhile, transfer the shortcrust pastry in your pie dish, making sure to leave a small border out of the dish (as in the picture).
STEP 4
Transfer your meat and its juice again to the pan, then mix. Add the flour and stir until it is well incorporated. Then add: thyme, bay leaf and chicken stock.
STEP 5 Pour in the beer, carrots and mushrooms.Season with salt and pepper.Bring to a boil, then cover your pan and cook over low heat for 10 min.
STEP 6
Put your preparation into a dish and let it cool for about ten minutes in the fridge. Then pour your preparation into your pie dish already containing your shortcrust pastry, making sure not to put too much juice inside to not wet your dough.
STEP 7 Cover it with the puff pastry.To close the pie, fold the border of the shortcrust pastry over the puff pastry.Beat the egg in a bowl, then brush your pie with a small amount of egg (this will allow it to brown in the oven). Cut a small cross in the centre of the pastry.Bake for 40 min.

After 40 minutes, your Irish pie is ready!
COOKING TIPS: → If you like the taste of celery, you can add a stick with the onion in step 3.
