A recipe discovered during my childhood in Cuba and lovingly passed down to me from my nanny Yani.

INGREDIENTS
CARAMEL
Sugar – 120 g
Water – 3 tablespoons

FLAN
6 eggs
Whole Milk – 500 ml
Sweetened Condensed Milk – 400 ml
DIRECTIONS
STEP 1
In order to prepare the flan for cooking (water-bath in the oven) choose 2 dishes:
→ a dish which will contain your preparation,
→ a larger high-side dish which will contain your first dish.
Preheat your oven to 200 degrees Celsius (= 390 degrees Fahrenheit).


STEP 2
CARAMEL.
In a saucepan, heat the sugar and water over medium heat. To make a perfect caramel: cook it alone without mixing or adding utensils to the saucepan.
When it turns amber (like in the picture) pour it quickly into your dish and stir your dish so that the caramel spreads over its entire surface. Be careful not to burn yourself, the caramel is very hot.

STEP 3
FLAN.
While the caramel is cooling, in a large bowl whip vigorously : the 6 eggs, the milk and the sweetened condensed milk.
Your preparation is ready, pour it into the dish containing the caramel.

STEP 4
Cover your dish with aluminium foil (close sides tightly) and insert it inside the large dish. Add water up to half. Bake in the oven for 1 hour.

STEP 5
Remove from the oven and the water-bath. Let it cool completely. Then carefully turn it over on a plate. Your Cuban flan is ready!

COOKING TIPS:
→ To check your flan is perfectly cooked, you can insert a toothpick or a knife into the centre, if it comes out dry your flan is cooked, otherwise put it back in the oven a few more minutes.

→ If you want to give a vanilla flavour to your flan, add a tablespoon of vanilla extract (step 3).
