A recipe discovered during a traditional brunch in Montreal at my friend Christine’s house.

INGREDIENTS
Flour – 210 g
Milk – 310 ml
Sugar – 2 tablespoons
Melted butter – 60g
1 Egg
Baking powder – 4 teaspoons
Pinch of salt
Vanilla extract (optional)
Maple syrup
Fresh blueberries – 1 cup
Directions
STEP 1
Combine the sifted flour, baking powder and a pinch of salt in a large bowl.
STEP 2
In a separate bowl, whisk together: the egg, sugar, milk and cold melted butter, making sure the egg is well incorporated. (Optional: to give a vanilla taste to your pancakes, you can add a tablespoon of vanilla extract).
STEP 3 Add the egg-sugar-milk-butter mixture to the first mixture in the large bowl. Beat it with a whisk to avoid lumps.Your Pancakes dough is ready!
STEP 4 Heat a pan over medium heat and melt a little butter. When the pan is hot, pour a ladle of dough.Wait a few minutes, when the surface of your pancake forms small bubbles it’s time to flip.Let it cook for a minute.Your pancake is ready!
STEP 5
Finally, add the maple syrup and some blueberries.
COOKING TIPS: → If your dough is too liquid you can add a little sifted flour.
→ You can add blueberries directly to the pancake dough (add them to the dough just before step 4).
